Curry Chicken Served with a Stir fry Chickpeas Salad

Today I will be cooking in the kitchen Curry chicken with a stir fry chickpeas salad.

I discovered this recipe from my mom who is always learning to invent and spice up our Sunday dinners together. This is a light meal for all those who are watching their weight or waistline. It is also not recommend if you have picky guests over.

So let’s get started
Ingredients for Chickpeas salad
     - chickpeas
     - green peppers
     - yellow peppers
     - broccoli
     - carrots
Step 1: clean all the vegetables carefully, and then cut u your peppers and broccoli in smaller bite size pieces.
Step 2: Heat your pan up and add olive oil to the pan  approximately 4 tsps. , use your judgment..
Step 3: add all the ingredients listed above and let it cook on medium heat for 10 to 15 minutes , stir occasionally, feel free to add more of your favorite vegetables I desired.
You will need the following ingredients

-          Cleaned chicken

-          Curry powder

-          Thyme chopped up

-          2 very small onions

-          1 ½  tsp. of Salt

-          2 spoons of grated ginger

-          Cilantro

-          1 tsp. of turmeric powder

-          1 tsp. of garlic

-           4 tsp. of Olive oil

Optional add ins I didn’t use

-          Mustard seeds

-          Chicken broth

-          Scallions

Step 1: Ensue that you chicken is properly cleaned and all skin and fat have been removed.

Step 2: wash the chicken with salt, lime juice or vinegar to kill any possible germs

Step 3: cut the onions and garlic (if in solid form) into tiny bite size pieces, then place them into a bowl

Step 4: add all of the other ingredients into the bowl as well as the chicken and mix the chicken into the seasoning until it is fully covered.

Step 5: Cover the bowl with glad wrap or a plate to allow the seasoning to soak into the chicken.

Step 6: When you are ready to cook the curry chicken place it on the stove and make sure the pot is on maximum heat (boiling almost) pour the chicken into the pot slowly. Wait for chicken to brown  and continually stir and pour a tip of water every so often so the chicken does not burn. It should take approximately ½ an hour to cook.

Campbell's Chicken & Rice recipe

Today in the kitchen we will be making for dinner chicken and rice. This recipe was found on the Food Network and got great reviews, so let’s give it a try, it's an easy chicken dish. This meal only takes approximately 20 minutes and was from Campbell's recipe I found online.

Ingredients

1 package of instant rice
4 whole Sliced boneless chicken breast
1 ½ cups of water
1 tsp of canola oil
2 cups of cooked vegetables
1 can of CAMPBELL’S cream of chicken soup

STEPS
1.      Place your boneless chicken into your frying pan with medium heat along with your canola oil, stir often to ensure chicken is cooking and browning evenly.

2.      Open you can of CAMPBELLS soup and slowly pour it into the frying pan as well.

3.      Then proceed to add you 1 ½ cups of water along with your choice of vegetables, stir for 2 to 4 minutes .

4.      Now add in your instant rice and allow it to cook for 5 minutes in the pot.

5.      Allow your ingredients to sit on low heat until rice is cooked well.

This was a great chicken recipe meal because you can use many different substitutes for each ingredient , you can always change the flavor of your Campbell’s soup or choose a low fat calorie option. I hope you enjoy making this meal and have a great dinner whether alone or with family and friends.

Bon appetite, thank you for dining with me.

Pasta

There’s nothing tastier than a hot bowl of pasta for dinner especially on a cold weekday .There are many kinds of pasta you can have such as Fettuccine, linguine , asnolottu or a bucatini just to name a few. This week for dinner I decide to have pasta. Pasta is another quick and easy meal not to mention cheap meal to make on a weekday.

I love pasta and it’s has been one of the first meals I’ve ever learned to make. At my local grocery store you can purchase various types of pasta for as little as 99 cents. Tomato sauce prices range so you are able to find one within your budget, but be aware the cheaper this tomatoes sauce is can affect the quality and the taste. You will also need cheese, people usually uses parmesan cheese , but I preferred marble, so that’s what I used.

What you will need

  • Parmesan cheese (I prefer marble cheese)
  • Tomatoe sauce of your choice
  • Strainer
  •  Water
  •  Oven
  • Pot and pan
Cooking Pasta Steps
1. Rinse the pasta off , place into pot and fill the pot with water until water has covered the pasta and turn burner on high
2. Allow the pasta to cook , you will notice it is softer to pick up with a fork from the pot, let it cook for approximately 15-20 mins depending on the type of pasta or the instructions from the package
3. Once pasta is almost done add 2 teaspoons of salt
4.Drain the water from the pot by using a strainer , and place pasta into a bowl

                  Sauce Instructions

1. Take pan and heat the oven to 6, and pour tomato sauce into the pan to heat up
2. You can add additional ingredients to the sauce if you wish ( I cut up onions, green peppers, black peppers)
3.      Stir the tomatoes sauce occasionally and you may want to add water if the sauce is becoming too thick just as little expired

It's Dinner Time - Homemade Pizza

Fast food is pretty amazing in the sense that you wait less than 15 minutes to get your meal and you’re out the store or threw the drive thru. But anyone who’s ever made homemade pizza or tasted it before can definitely agree with me that homemade pizza is definitely worth the time.

This was my first time making my own homemade pizza but I’ve tasted a few, so I had  a good idea on how the finished product should look like smell and taste. I also had some good oll help from YouTube videos.
Hmm hungry yet? If so follow the recipe and instructions below trust me you will not be disappointed or still hungry after this meal.

Step One: Decide if your making your pizza from scratch or store bought this will make a difference in your prepping stage. I made mine from scratch minus the dough because that makes a whole day to make. Once you have your dough you must flatten it to how thick  or thin you would like your crust. I  made mine thin because it takes less time to cook that way.

Step Two: After flattening and creating the shape of your pizza dough ( circle or square) you make your sauce. I made my sauce from tomatoes and a few other herbs listed in my recipe page. You can use that or a good old pizza sauce from your local grocery store, whatever you prefer.

Step Three: Decide on your toppings and what sizes youd like to cut them to be( I cut my toppings pretty small because I didn’t want it to be to heavy on the dough and also for it to cook faster)

Step Four: Now that you’ve done your prepping place your tomato sauce onto the dough (put as much sauce as like on your pizza while using your discretion).

Step Five: I personally place my toppings on first and then the cheese, but you can do it however you feel most comfortable. I place mine under neath because I think it allows the toppings not to fall and I think it looks nicer, but that’s just my preference.

Step Six: place the cheese all over the pizza until it covers all the toppings

Step Seven: place in pre heat oven of 350 degrees and leave it for approximately 15-20 minutes, make sure you check your oven every so oftened though. You can also tell when the edges of your crust have turned a golden brown.
